OUR PHILOSOPHY
WILD YEAST BREWING CO.
We make delicious and nutritious traditionally brewed ginger beer! We grow all our own ginger and turmeric down the back paddock, organically! Strategically based in the volcanic soil and surf rich Lennox Head, our core customer base is Northern Rivers, NSW. We love doing good for the planet on our own small scale and creating tasty, healthy products! So it’s either homegrown, sourced locally, handcrafted, reusable or recyclable!
From a traditional method of fermenting ginger beer that was passed on by friends, we have grown a love for all foods fermented. It’s not just the taste, but also knowing the goodness that fermented foods provide. We also enjoy growing (sometimes mostly just attempting) a bunch of vegetables as we love nothing better than the fresh taste and joy of home grown! Root vegetables are easiest to grow (less grubs and bugs will beat you to them) and make sure you cover the cabbage, so a homemade Kraut or Kimchi seems to go down very well with an icy glass of Wild Yeast Ginger Beer around here!
Offering our bottles in the reusable or returnable flip top bottles gives our customers a simple way to do a good thing for the planet, whilst of course enjoying our famous flavour!

Our carbon footprint
We measure our carbon footprint in meters not miles. From the back paddock harvested ginger to the brewers keg is about a 50 meter glute engaging hike up the hill! But it's not just the ginger we grow. We also grow lemons, limes, herbs and spices that we use in our brewing. When we can, we grow our own, always organically!
We make it a little easier to help you say no to plastics! We bottle in re-useable and returnable glass flip top bottles. You can return your bottles, and we hygienically sterilize for reuse. Or reuse yourself for your own home made summer elixirs. Just doing our best in a small way which helps you reduce your waste in return.
Our other ingredient is sugar. Sugar is essential for the wild fermentation process and creates the natural carbonation in your bottles. We source our sugar from the local cane fields in the Northern Rivers via Sunshine Sugar. Supporting local farmers and keeping our carbon miles to a minimum.
Our carbon footprint is minimal and doesn't get much more local or sustainable than this.

Back paddock grown organic ginger
Looking for a unique gift from the Northern Rivers of NSW? Our Spiced Ginger Beer certainly ticks the boxes for this one. Knowing our ginger is sourced straight from the back paddock and grown organically certainly means it is special! In the early Spring of 2021, we planted 10 kg of ginger in various garden beds in the back paddock. With the right conditions, organic rich soil and plenty chicken poop we should grow approximately 200 kg of juicy spiced up healthy ginger! Photos below were taken mid-December of a few of our beds with turmeric growing also.
Fast forward to July 2022 we are still pulling out kilos each week of large juicy ginger. We look to plant 30 kilos Spring 2022.
